I'm planning on implementing OpenKM on a Ubuntu 10.04 LTS server in a secure environment
that required rigorous Operating System patching requirements.

Will such patching break OpenKM ?

I would say that depends on what sort of patching you are proposing.

I believe some internal communication may be required between applications to work propoerly, some ports may need to be openned (external).

For me I have deployed OpenKM with Debian Wheezy on Apache2 with SSL, I haven't patched the server to extreme levels but both my sever's firewall and router's firwall are allowed only required ports.
