My client want's to have possibility to change UUID. Is this good idea to add this special functionality? Would this affect other system specific functions??

You must not change the UUID the idea is create new metadata field and put there your new UUID. That the correct right for doing ti and solves the problem.

UUID are generated universal node ids and can't be changed. As proposed by Josep, try to create a custom property group.
