Choice of Operating Systems (server vs desktop)

Hi,
We're planning to do some experimentation with OpenKM. For reasons of familiarity it will likely be installed on a windows VM.
The comparison of versions lists that community runs on windows server operating systems.
Given that the systems is largely Java based, is there any reason why I shouldn't use Windows 8.1 for this?
Alternatively I could put it on a CentOs 7 VM. If that's what we're going for the infrastructure team here want to know if this install will be RPM based? if not how much manual maintenance would be required to keep it up to date?
I've tried searching the forums to get an idea of the prevalence of O/S for installs but unfortunately "Windows" is an ignored search term as it's too common.
