Hi,
I've to upgrade my OpenKn to new 6.3 from the actual 6.2.2.

I had a look to the migration Wiki (http://wiki.openkm.com/index.php/Catego ... tion_Guide) but there is no direct migration from 6.2.2 to 6.3

Shall I follow all the step for each intermediate release?

First of all make a backup of your system.

About migration, we suggest jumping step by step, although in some cases you can jump between versions, always is good practice and more secure, do step by step.
