Is it possible for Libreoffice to be subsituted for Openoffice? Reason I ask is because none of my previews seem to work.

yes you can use libre office as open office without major problem.

Can you convert .doc to pdf ( using toolbar option ) ?

I can view PDF's int he previewer. but .doc's just show up as a conversion generation, even when I download them as a pdf.

You should take a look is soffice service is started by jboss, after configuring you should restarting jboss. Ensure none other libre office instance is started only started by openkm should be running ( soffice.bin )
