Currently there is no upgrade guide because the Docker Community images are experimental and not intended for production. I think the current structure will remain, but we need more feedback to get it done. The initial images were produced just for testing, because there was no possibility to config...
You are true, this new image is not compatible. Many users requested a way to use OpenKM with different databases and this the only way we have found and, indeed, there are many changes which makes it not compatible with the previous one.
The installed tries to detect the OS version to decide which dependencies are needed. In this case, the Mageia distro has not been tested so the installer won't work. I would recommend a more popular distro like Debian, Ubuntu or CentOS otherwise you can find problems.
I've tried the uploaded image and works. Can you post the error log or an screenshot?

This issue should be present in latest Docker image. Which version are you using?
Yes, you can install in Docket like in any Ubuntu server:
$ apt update
$ apt install tesseract-ocr
I would recommend adding comments as notes, so them will be more accesible to users.

It depends on the mail you have used: in case of generic mails like hotmail or google the system may drop your query. Otherwise, please contact me at support@openkm.com and will forward your request.
We have a test image which can be used with several databases in a more Docker way. If anyone is interested I can publish it but the documentation is not finished.

Information will be persistent unless you destroy de container. Otherwise you need to use a volume to keep the information safe.
